Raising the Roof at E-ville Spirits

If you’ve been interested in learning more about wines and scotches, you’ll be happy to hear that Shannon Carscallen is raising the roof at her shop, E-ville Spirits and Wines, to create a second floor seminar space for just that purpose.

The plan, which involves raising the center section of the roof, will increase headroom upstairs and allow for reconfiguration of the floor plan to create a 300 square foot classroom with comfortable seating and plenty of space for presentations, guest lectures and tastings. Once construction is completed, targeted for early summer, Carscallen plans to hold monthly seminars for 20 or so people.

“The classes really are meant for Ellicottville’s year-round residents and regular visitors. They will be held only during the spring, summer and fall – we’re just too busy during the ski season.”

The wine seminars will start with an introductory class, followed by presentations and discussion about wines from various countries and regions. Scotch aficionados can enjoy similar seminars on scotches by region. Seminars will be free, and space will be limited.

“We’ll taste various wines or scotches during the seminars, learn about pairing them with the right foods and compare them to similar products from different regions.”

Carscallen, a self-described “wine geek,” is one of Ellicottville’s few real experts in the field. She and her very knowledgeable staff, including “wine and spirit advisor and single-malt guru” Bob Duke, have trained Cadillac Jack’s staff on serving and pairing wines with menu items, and has done numerous training sessions with The Silver Fox staff. She does tastings in private homes on request, and the store now has a cuvee tasting system in operation at all times. Plus, she has made it a priority over the last several years to stock an ever-increasing variety of international wines in an effort to expand people’s horizons beyond the standard cabernets and chardonnays.
