Cheers! Salud! Slainte! Prost! No matter how you say it, this weekend will celebrate fine craft beers and regional wines.

As it is every year, the ever-popular 10th annual Beer and Wine Festival at Holiday Valley is already sold out, but don’t dismay. You can still join the merriment at the sixth annual Brew Master’s Dinner on Friday evening, Nov. 8.

The beer and food-pairing event, will feature the unbelievable flavor combinations of nationally recognized craft beers and classic seasonally focused, locally sourced cuisine. The event is an informal and intimate meet-and-greet, and brewers will be on hand to discuss each beer with you and explain the pairing decisions.

New this year — food items will be grown and purchased from within a 60-mile radius of Holiday Valley and will be served at five food stations.

“We’re really excited about the Brewer’s Dinner this year with local fresh foods,” said Jane Eshbaugh, marketing director of Holiday Valley. “This is a direction we’re heading for John Harvard’s, too. Get the brewers to start talking about their beer and you can learn a lot!”

Appetizers include Amish Valley View cheeses, Welch rarebit from Cuba Cheese and local smokehouse sausages along with butternut squash and pumpkin soup, Amish fresh-made breads all served with Ithaca Beer Nut Brown.

The salad and vegetable station will feature locally grown greens, Fredonia apples and black walnut dressing with olive oil from D’Avolio, seasonal root vegetables and roasted pumpkin from Pumpkinville enhanced by Rohrbach Brewing Co. Scotch Ale and Flaherty’s Irish Ale.

EBC Nut Brown and Southern Tier Harvest Ale will bring out the best in entrees like roasted free-range chicken from Wendell’s, crown rack of pork and stuffed buttercup squash.

A potato bar with a variety of toppings and will be served with Voodoo Brewing Co. Wynona’s Big Brown Ale and Amber Waves.

Top off the evening with delectable desserts like Charlap’s pumpkin ice cream, an assortment of Amish pies and Watson’s chocolates complemented by EBC Hot Chocolate Stout and Southern Tier Warlock.

The Brew Master’s Dinner takes place at Tannenbaum Lodge and begins at 6 p.m. with hors d’oeuvres. Food stations open at 7 p.m. Tickets are $65 per person and can be purchased by calling (716) 699-2345 or at http://www.holidayvalley.com/events/brew-master-dinner#.UnkQbRB1npo.
