Emma Freeman knows that her new Ellicottville coffee shop is one of the most anticipated openings of the season. She knows that people really miss hanging out at the spot that used to be there – and especially out front at the iconic fire pit that is one of the Village’s most popular gathering places at all times of the year. So, when the Daily Grind opens next week (fingers crossed), she knows she wants to be that reliably comfortable home-away-from-home. But she also wants to be the newcomer that offers something a little different.

For Freeman, different means serving only the best coffee, offering a menu with something for everyone – carnivores, vegetarians and vegans alike – and caring for the planet.

Coffee, of course, is the most important menu item at the Daily Grind. Freeman is still narrowing down vendors who can provide her with a regular supply of organic, fair trade beans that will hold to her standards for the most delicious hand-crafted coffee drinks, including espressos, cappuccinos, iced coffees and more.

Sourcing the ingredients for the menu has been just as determined. Wherever possible, Freeman has chosen organic, sustainably raised, fair trade products and vendors who can keep her well-stocked.

The breakfast menu will include bagels and bagel sandwiches, parfaits, fruit salads and homemade baked goods prepared daily by Freeman and a vegan baker she has hired. The lunch and dinner menu will feature traditional deli-style sandwiches as well as a wide range of salads, soups, sides, seasonal items and daily specials. Plus, almost all items can be customized for vegans/vegetarians.

Freeman says she’ll use biodegradable, recyclable, compostable products in the restaurant as much as possible, and she’ll provide customers to sort and dispose of their throwaways in the labeled bins provided.

“I’m excited people are looking forward to having their coffee shop back,” Freeman says. “I think they’ll love what’s new in our “conscious café.”

The exact opening date is not yet confirmed, Freeman says. “We’re still fine tuning processes, negotiating with vendors and making final menu decisions,” she explains. But she does know they’ll be open daily beginning at 6 a.m., and she looks forward to welcoming you back home.
